How much does a cup of flour weigh?
A cup of all-purpose flour weighs about 127 g with a 250 mL Canadian cup, and 120 g with a US cup. Whole wheat flour is a little lighter by volume: about 119 g per 250 mL cup.
How you measure changes everything
Flour packs down easily. If you scoop the cup straight into the bag, you can end up with up to 20% more flour than the recipe intended, enough to make a cake dry or cookie dough tough. The right way: stir the flour, spoon it into the cup without packing it, then level it off with the back of a knife. Sifting makes flour lighter still, by about 10%.
